This is an easy, quick and delicious dish. Start the sauce as soon as you put the pasta in the boiling water. In a skilled with good EVO add two garlic cloves and as soon as they flavor the oil remove them. Take plum tomatoes - canned ones are ok - place them in the skillet and usind a fork crush them. Do not use a blender. Fter a few minutes add ricotta and stir. Place the pasta into the mix and stir adding a little pasta water, Shut the heat and wait a minute. Now you can add grated parmigiano. Serve and add some basis cut by hand for a pleasant aroma. Enjoy.
