These fresh Sicilian lemons are a far cry from the apparently perfect ones found in your super market. First of all they are not necessarily yellow or better, uniformly yellow. This is usually the result of a chemical bath. You see, the part of the lemon facing the sun is the one that is yellow while the shaded part is usually more green. But even better, these non GMO or in no way modified lemons are of different shades of yellow and green and are not rind perfect. What is perfect and almost heavenly is their sublime flavor. The photo cannot do justice to this glorious emanation. Too bad.
