Just like broccoli, these broccoletti or broccolini, baby broccoli are easy to prepare if one treats them lightly. Steam them a little then immerse them in ice water to maintain theis rich color. Then they are sautéed in extra virgin olive oil being careful not to burn them yet allowing them a slight crust to bring out theis flavor. The result is a wonderful contorno or side dish. Enjoy.
