Pasta e patate, pasta with potatoes. We are not in Ireland but in Naples where this is a very popular and typical dish. Naturally it has variations throughout Italy but the Neapolitan version is the most delicious. It's not vegetarian as the Sicilian version because it uses pancetta as an ingredient. Needless to say it's delicious and if you crave carbs, this is the ticket.
