Rigatoni al sugo di melenzane or rigatoni with eggplant ragout. A wonderful and tasty dish that has a few steps including frying the eggplants and then making the sauce. A vegetarian version of meat sauce. The best eggplants and olive oil must be used along with good pasta. The result is heavenly. Not the lightest sauce but once in a while you must show your stomach who is the boss.
