I found these unusual mushrooms at Trader Joe's called King Oyster mushrooms. They have a long stem that is basically the entire body and a small cap. They look line scallops and are not tender but have a pleasant bite. They also have an unusual flavor that I found very pleasant. A very simple sauce. EVO in a skillet, two cloves of garlic and after the oil has been flavored, toss in the cut up mushrooms and the cubed zucchine. After. a few minutes add white wine. During this process prepare the pasta water. Toss in the penne rigate and stir well. Remove from the heat and after a minute add the Italian parsley and lots of grated parmigiano reggiano as to make a nice creamy sauce. Serve along with a dry white wine. Very nice.
