Pesto trapanese
Pesto trapanese, Sicily's answer to pesto genovese. The procedure is similar but instead of pinoli, almonds are added along with some tomatoes (optional) and for a sharper taste incanestrato or Sicilian pecorino can replace the ubiquitous parmigiano. The flavor is wonderful and it's a nice change from the genovese variety. Both. are delicious.
