 In Sicily we really have the best eggplants and we have many ways to prepare them. Yet, this simple way is one of my favorites. Just fry a diced eggplant and prepare a quick sauce of fresh chopped tomatoes and add some vinegar. That's all folks. To finish the dish put basil leaves. Nothing else to add. DELIZIOSO
