 A delightful rice dish for a light lunch. Rice with cauliflower to which I added a peeled fresh tomato, minced garlic a dash of hot pepper and once the heat was turned off a nice amount of grated parmigiano and a sprinkle of parsley were thrown in and stirred. Naturally a little a little raw olive oil closed the dish. Just perfect on a snowy day.
