The wonders of frozen spinach. It's absolutely ridiculous to buy fresh spinach because as you cook them thy simply vanish. With the frozen variety there's no waste and no annoying washing. This is a classic Italian dish of pasta con le spinaci or pasta with spinach. However I added cut up potatoes to enhance the flavor and finished the dish with a nice spolverata or dusting of parmigiano and the game was over. Buon appetito.
