 A classic dish from Roman cuisine, saltinbocca alla romana. It literally means jump in your mouth referring to the wonderful flavor. This dish is usually made with veal but I chose thin port cutlets and because I didn't have sliced prosciutto I omitted it. So this is really pork breaded in butter sauteed in butter with salvia -sage- and a reduction of white wine. Needless to say they were delicious.
