 Pasta 'cu l'agghia or pasta with garlic is what you prepare in Sicily when people visit you unexpected and naturally as any Italian knows guests must eat. It's a simple dish prepared with a pestle and mortar in which coarse sea salt is placed on the bottom along with a few cloves of garlic and basil that are made into a cream. Tomatoes are added and olive oil. The mixture is added to the spaghetti -I used linguine- and it's served. Grated cheese is optional. Naturally one may add more garlic but I prefer a more subtle taste. This is truly a wonderful dish especially in the summer when the main ingredients are fresh.
