 Pappardelle from Italy prepared alla Norma. This is a classic Sicilian dish. The pasta is seasoned with s simple fresh tomato sauce and is then dressed with fried eggplant slices and either fresh ricotta or ricotta salata. Pecorino is then sprinkled. It is a delight. Not  light dish but  delicious one.
