Pasta fritta
Pasta fritta or fried pasta is a great way to use leftovers on a hot day when you don't feel like cooking. Place some EVO on a frying pan, add one clove of garlic and naturally add the leftover pasta with it's sauce. Fry until the bottom becomes crusty .In this case I also added some left over fried eggplants. The dish is completed by adding pieces of basil, black pepper and pecorino. Tasty and easy.
