Pasta fritta
Pasta fritta or fried pasta is a great way to use leftovers on a hot day when you don't feel like cooking. Place some EVO on a frying pan, add one clove of garlic and naturally add the leftover pasta with it's sauce. Fry until the bottom becomes crusty .In this case I also added some left over fried eggplants. The dish is completed by adding pieces of basil, black pepper and pecorino. Tasty and easy.

What we have here is fried leftover pasta with a broccoli cream sauce. When it gets real crispy it assumes a whole new flavor that is very satisfying. We call dish pasta fritta. It is especially good with spaghetti in plain fresh tomato sauce. Needless to say, it's very economical in these days of high food prices.
