Pasta fantasia

 

Sometimes you need some fantasy plus what you have handy and create a super dish. I had some fried eggplant cubes, some pomodorini, olives, basil and ricotta. The pasta was organic Italian rotini by Garofalo. The end result was a delicious dish that I will prepare again.
