Fried baccala or salted cod is one of my favorite dishes, it'a indispensable at the Christmas eve supper, for example, I like it anytime. First it must be soaked in water for at least a day while changin the water at least three times and then it's ready to prepare. There are innumerable ways to cook it but I prefer to prepare a pastella, batter, and fry it in olive oil. Just superb.
