 A delicious dish. Spaghetti with broccoli in a sauce containing leeks, anchovies, a few pomodorini and fresh rosemary. Not the fastest or simplest dish but a very delicious one.

 Another example of complex simplicity. Very few ingredients but of the highest quality and detail in the preparation. The genius of everyday Italian cuisine or cucina povera. Here we have Italian spaghetti extruded through bronze plates, a super fresh broccolo and very good parmigiano reggiano. Naturally the EVO was also outstanding and the results were memorable. Buon appetito.

 A rather complex but delicious dish. Basically penne rigate with broccoli, alives, raisins with a soffritto of leeks instead of onions to give a lighter and more subtle flavor. Pomodorini were added for flavor and color. It was topped of with toasted breadcrumbs or muddica atturrata. This is basically a Sicilian dish.from the Messina province.

Italian cuisine is a celebration of nature. Some dishes like this one are deceptively simple. In order to pull this off only the freshest and best ingredients will do.
