 I just love pasta e fagioli, pasta with red kidney beans, but I always like to add a vegetable to it. Here I added broccoli spears to make a vegetarian dish that was delicious.

    It there isn't a more traditional Italian dish than pasta e fagioli. It's what Italo Americans love to call pasta e fazuul. It's a very filling and simple dish that warms the stomach and the heart when days get colder. I like to add a small potato diced very small to create a thicker broth. The beans are usually red kidney beans, but white beans or cannellini can also be used. When using dry beans soak them overnight in plenty of water. If using canned beans be sure to rinse them in order to remove any additives. Enjoy.

Pasta e fagioli

Yes indeed that staple of Italian winters. Just wonderful when cooked with the products we have in Sicily. BTW, my neighbor just brought me a bottle of freshly pressed olive oil. It give new meaning to the words extra virgin.

 The NY State pavilion of the 1964-65 worlds fair in Flushing Meadows Queens as it stands today as an auditorium for community events.
