 Verdure in pastella or vegetable fritters. Simple to make but you need patience. The pastella or batter is simple. Flour, seltzer water, lemon juice, sea salt and black pepper. Agg the waterto the flour slowly and stir always in one direction as to avoid lumps. When the right consistency is reached add the shredded vegetables. In this case I added zucchine, carrots, parsley, onion and celery. I stirred and then deep fried them in corn oil. Crispy and delicious.

 Verdure in pastella. Pastella is Italian for batter. These are cauliflower florets and sliced zucchine deep fried in a simple batter. They are delicious; the type you can't eat just one.

 Cod fish in pastella Italian for batter. A very simple batter consisting of flour, soda water, a little lemon juice, sea salt and parsley. It was accompanied by the classic steamed broccoli and cauliflower salad. Really tasty.

 Fresh cod fish deep fried in pastella, Italian for batter. Accompanied with a simple salad of steamed cauliflower and broccoli seasoned with extra virgin olive oil, black pepper and a hint of garlic. Very nice.

 Traditional fare on Christmas Eve. Fried baccala in pastella, batter, In Italy we do not do the seven fishes. It's an Italo American tradition but baccala is a must.
