I prepare lentils with cauliflower often especially during the fall and winter. This time I added escarole to the minestra for a more interesting flavor, Needless to say this is a delicious and healthful soup.

 This is a dish I prepare often. Lentils and cauliflower. I make it with pasta or as a souo but this time I made it with rice. A very healthy and delicious vegetarian dish.

 I'm going through a lentil period of sorts. They are simply the healthiest legume and one of the richest in proteins. Here I prepared with rice along with.diced.carrots, onion, and celery. All prepared woth good olive oil. Very tasty,

 An unusual combination dictated by necessity. The only vegetables I had to add to the lentils were radicchio  and leeks so I did the deed and the result was a lentil soup with the mild flavor of leeks and the slight bitterness of radicchio. A tangy and delicious dish. 

A vegan delight

 This unusual combination of stewed lentils and mushrooms mimics a normal ragu and has all the necessary proteins when paired with pasta. It is a very tasteful dish. 

                A creamy version of pasta and lentils. The pasta is cooked along with the lentils. Much stirring is needed but the result is a pasta that is not soupy and delicious
 

  A minestra that consisting of dandelions with cauliflower and lentils; an excellent choice on a cold night. All on a bed of rice. Just delicious and filling.
