Italian potato gnocchi with chopped pork ragout with added ricotta and chopped walnuts. I love gnocchi because they really fill you up.

A supremely delicious dish: pappardelle with eggplants and ricotta. Summer in a dish.

Italian gigli pasta - it means lilies in Italian, ergo their shape - with spinach and ricotta. I also added crushed pistachio nuts. Simple and delicious. BTW frozen spinach is recommended because it's easier to handle and you needs a lot of  spinach leaves that seem to vanish when cooked.

A super creamy and light dish. Italian organic spaghetti with sauteed zucchine and a a cream made from part of the sauteed zucchine and ricotta. A marriage made in heaven. I used half and half instead of heavy cream but added a dab of cream cheese. The soaghetti were added to the mix when al dente and once all stired, I shut of the stove and added parmigiano and parsley. A sprinkle of white pepper closed the dish. It was a memorable first course.

Looks like the last of the foliage here in North East Pennsylvania. Too bad, winter is just around the corner.
