 A super creamy and light dish. Italian organic spaghetti with sauteed zucchine and a a cream made from part of the sauteed zucchine and ricotta. A marriage made in heaven. I used half and half instead of heavy cream but added a dab of cream cheese. The soaghetti were added to the mix when al dente and once all stired, I shut of the stove and added parmigiano and parsley. A sprinkle of white pepper closed the dish. It was a memorable first course.

 A wonderful pasta dish. Spaghetti with canned tuna and onions as the main ingredients and the addition of pomodorini to add a little acidity and snap. To close the dish I added a sprinkle of oregano and basil leaves. Very good to eat and to photograph.

A new twist on classic spaghetti with zucchine and shrimp. I sautéed the shrimp a little so that they retained more of their flavor. I also added parsley for freshness. Just delicious.

 It's time for local broccoli. Here I made a spaghetto or spaghettino as it is said in Italian as a  good natured way to describe a dish, with a creamy sauce. Delicious, naturally.

 This is not classic boscaiola but it's delicious nevertheless. It's spaghetti with mushrooms, sausage, gorgonzola and half and half. A nice sprinkle of parsley and black pepper completed the dish.

 Of course spaghetti with a pesto of zucchine and shrimps is a classic Italian dish, I wanted to add a few more ingredients for a somewhat different taste. So I added black beans and pistachios and the result was yummy.

 Pasta con cavoli or pasta with Kohlrabia winter stable in Sicily where these grow during the winter. A very simple dish with a touch of tomato concentrate, garlic and peperoncino.


 Pasta con patate or  pasta with potatoes. This is the non vegetarian version popular in Naples. It has pancetta together with the soffritto. A very hearty winter staple.

     Another dish that looks Chinese but in actuality is a staple of Italian cuisine. Spaghetti with sausage, broccoli and mushrooms. I omitted peas and toasted breadcrumbs A much lighter dish better suited for lunch.
