 As you may have already realized, I love pappardelle and zucchine; the latter being plentiful and still from local farms. These are going fast only to be replace with those from fat away farms. I prepared this dish with a combination of pureed and fried zucchine for a contrast of flavors. A sprinkle of fresh black pepper and the magic was complete. Very tasty.

 A friend brought me some delicious pomodorini she had grown in her garden in Westchester so I paired it with a nice zucchina and the result was spaghetti with fried zucchina and pomodorini and basil. Needless to say the result was magic.

 A delicious but rather unusual combination of ingredients makes this a very interesting dish. I used shredded zucchine, leek, mackerel in olive oil, a clove of garlic and lemon juice. I also added a little fresh red Cayen pepper and a sprinkle of black pepper for a livelier flavor and that was it. A very enjoyable dish that is usually made with canned tuna but other types of sea food items can be substituted as one's fancy dictates.

 I found some really fresh zucchine, this is the correct plural in Italian it is one zucchina two or more zucchine because it is a feminine word. We do not add a simple s to make plurals as it is done in lesser languages. But enough grammar. I had some frozen shrimp and the result was delightful.

Farfalle


 A wonderful dish.Basically the traditional pasta with zucchine and tuna but I added a pesto of zuchine and the sesults were really mouth watering. I used farfalle because they have a tendency to keep their al dente quality very important if there are leftoves.

 Zucchine are very versatile and when paired with good canned tuna in olive oil, a very flavorful sauce is the result. I used imported Italian spaghetti always al dente for a simple but delicious lunch.
