A supremely delicious dish: pappardelle with eggplants and ricotta. Summer in a dish.

 Vegan imported raviolini or mini ravioli prepared with a light pomodorini sauce and topped with fried eggplants and fresh ricotta. Very tasty.

 This is a very simple dish but a delicious one. Eggplants in a tomato and garlic sauce with a dash of white vinegar. It's a superb side dish.

     Nothing fills you out like a plate of gnocchi. These are imported Italian potato gnocchi with sausage and eggplants without tomatoes. A delicious change of pace

     Stewed eggplants Sicilian style. First you fry them and then you make a sauce with chopped tomatoes with garlic and a dash of white wine vinegar. After you shut off the gas add one small finely chopped garlic clove and some basil always cut by hand. It's a great side dish.

         Another dish prepared in Sicily with eggplants found only there and pomodorini to die for. Shaved soft primo sale cheese was sprinkled on top. Delightful.
