Something to warm up your Saturday


 

Swiss chard is a very versatile green. I prepare in the traditional way my mother used tp.

One nice bunch of fresh chard is sufficient for two people. Wash the chard leaves carefully and trim the end of the stems. Use a large deep skillet and coat the bottom with good olive oil. Cut up two cloves of garlic and add it to the oil along with a few red pepper flakes. Heat on moderate flame and as soon as the garlic releases it's wonderful aroma, add the chard. Season with salt and black pepper, Stir and then add a few cut up red tomatoes (canned are fine) and mix. Cover and cook until the chard are done. This should take about 10 to 15 minutes. If the mixture seems dry, add some warm water. Done. Very easy and delicious and appropriate for a cold winter day. Dunk some rustic Italian bread that is slightly toasted and enjoy.
