Classic pasta alla norma. Because this dish made up of plain tomato sauce with fried eggplants and fresh ricotta or ricotta salata was Vincenzo Bellini's favorite dish and because Bellini's Norma was by far his best opera and is considered one of the the best Italian operas hence the name pasta alla norma was given to this quintessential Sicilian dish. Bellini was born in Catania, Sicily. When Maria Calla sings the aria casta diva it's an opera lover's delight.
