Something to warm up your Saturday

  Swiss chard is a very versatile green. I prepare in the traditional way my mother used tp. One nice bunch of fresh chard is sufficient for two people. Wash the chard leaves carefully and trim the end of the stems. Use a large deep skillet and coat the bottom with good olive oil. Cut up two cloves of garlic and add it to the oil along with a few red pepper flakes. Heat on moderate flame and as soon as the garlic releases it's wonderful aroma, add the chard. Season with salt and black pepper, Stir and then add a few cut up red tomatoes (canned are fine) and mix. Cover and cook until the chard are done. This should take about 10 to 15 minutes. If the mixture seems dry, add some warm water. Done. Very easy and delicious and appropriate for a cold winter day. Dunk some rustic Italian bread that is slightly toasted and enjoy. Buon Appetito

A few tips and opinions

 I'm trying to present authentic recipes so it's best to follow my advice. I realize that each one of us i free to do as one pleases but let's stick with the basics. First, because Italian cuisine celebrates nature, the best and freshest ingredients should be used. Of course moderation is in order. One must not go broke preparing a meal. Use good olive oil. Some trendy oils are sold in what amounts to perfume bottle sizes with concomitant prices. They are not for me because I use lots of extra virgin olive oil. Many oils say packed in Italy. These are not true Italian oils. The true oil says product of Italy. Packed in Italy can be also very good as long as the oils used are from within the European Union. Brands like Bertolli and Filippo Berio or Pompey are just fine and not Very expensive. Product of Italy doesn't automatically guarantee excellence. Brands such as Colavita, Partanna, Barbera and Botticelli are all very good without breaking the bank. For example Trade...

  This is simplicity in itself but it's a very appropriate lunch meal for a nasty winter day Escarole boiled in salted water served with old bread. Take a soup plate, put in a dash o good Evo, a finely minced garlic and some black pepper. Add the hot escarole and its coking water. Stir and add more oil and more black pepper. Serve with slices of hard bread. It's done. It will warm you up. Save the rest of the water for adding to soups.  Buon appetito 

La Galleria Umberto I

  This architectural gem was constructed under the reign of King Umberto I by architect Emanuele Rocco. It is similar to the  Galleria Vittorio Emanuele II in Milan. The Umberto I Galleria is near the San Carlo Theater, the oldest opera house in the world while the Vittorio Emanuele II is very close to La Scala and is more famous. Both are great places to have an espresso but the espresso is much better in Naples.
