Pasta alla Norma / E PL-2


Two things, this is not becoming a food blog nor is it a showcase for the Olympus E PL-2. The fact is that the camera is fantastic and when I cook something that is this good, I like to photograph it and share it. You see there are photos that are great to look at and those that are great to eat. This is one of those edible ones.
The story of the name of this dish may very well be an urban legend. Apparently it was the favorite pasta dish of Vincenzo Bellini the composer of Norma, considered by many to be the finest Italian Opera. This is a Catanese dish and Bellini was Born In Catania. However there are variations of this dish all over Sicily.
This dish requires plain tomato sauce placed over pasta. Then fried eggplants are added and ricotta either plain or salata [salted] is added atop. The basil adds a nice colorful touch. A pecorino cheese is usually sprinkled also. Delicious. This sis what I made for mothers' Day.
