Pasta alla Norma. Here we have rigatoni with plain fresh tomato sauce with fried eggplants and shavings of Ricotta salata. This was Vincenzo Bellini's favorite dish thus it was named after his most famous opera, Norma. I consider this one of the finest Italian operas. When Calls sang the aria Casta diva it was operatic heaven. BTW Bellini was born in Catania, Sicily.
